I’m not a breakfast person so when I find a recipe that actually makes me excited for the meal it’s a big deal! I absolutely loveee these little guys and they’re always my choice when I need to make something for a breakfast or brunch. The best part is no one can ever tell that they’re dairy and gluten-free. It’s always a shock when they see me munching on them because they hold together so well!
Even after making this batch of donut muffins for the post my mom and I ate almost all of them immediately lol. Which is actually why I’m posting this today-this is a perfect recipe for Mother’s Day! It’s fairly simple which means kids can help. Dipping them in the butter and cinnamon sugar is a favorite part for little ones. Plus it’s a sweet treat for mom’s to start off the day!
One important note about this recipe is that the flour blends have a big impact on the final texture. I’ve used some gluten-free mixes and been very unhappy with the result. If you switch it up from what I use, which is totally cool I’m always modifying when it comes to gluten-free options, just be sure to know that it may change how chewy/fluffy it ends up.

1/2 cup sugar
1/4 cup melted margarine (Nucoa is my favorite dairy-free option)
3/4 teaspoon nutmeg
1/2 cup almond milk
1 teaspoon baking powder
1 cup gluten-free flour mix (I use Namaste Perfect Flour Blend)
1/8 cup melted margarine
1/4 cup sugar
1/2 teaspoon cinnamon
Pre-heat oven to 375°. Grease 24 mini-muffin cups.
Mix 1/2 cup sugar, 1/4 cup margarine, nutmeg, almond milk in a large bowl. Then add baking powder and flour until just combined.
Fill the mini-muffin cups about half full. A scoop like this get’s the right amount and makes the whole process really quick and easy!
Bake for 15 minutes, until the tops are lightly golden.
While the donut muffins are in the oven put the melted margarine for the topping in a small bowl. In a separate bowl combine cinnamon and sugar.
Once the muffins have cooled enough to be able to touch, remove them from the pan. Dip the top in the margarine and then roll it around in the cinnamon sugar.
Let them finish cooling and then serve & enjoy!
